Black Bean Tuna Salad

Introduction

My own adaptation of some recipes I've been on here recently. It is a light, cool lunch or dinner idea. My own adaptation of some recipes I've been on here recently. It is a light, cool lunch or dinner idea.
Number of Servings: 4

Ingredients

    2 cans Tuna, drained
    1 can Black Beans, drained and rinsed
    3/4 cup Cucumber, chopped
    1/3 cup Red Onion, chopped
    2 Tbsp Lime Juice
    1 Tbsp Olive Oil
    6 Cups Red Leaf Lettuce (or your preference of lettuce)

Directions

Mix the tuna, beans, chopped vegetables, lime juice & olive oil in bowl. Put in refrigerator to chill.

Serve of a bed of lettuce. Serves 4 people.

Another option is to shred the lettuce and combine with the tuna mixture. Probably don't need all the lettuce for this option. Could also add diced tomatoes for additional flavor. Put the mixture in a tortilla to enjoy as a wrap. (Note: the recipe does not account for the calorie changes)
