Garden Chicken & Noodles

Introduction

This is a hearty one-pot dish that is quick and easy. It makes enough for 2 dinners or for a large group so it is perfect to take to a potluck luncheon or dinner. This recipe can be easily cut in half. Great served with whole wheat rolls and a salad. Recipe from Ronzoni Healthy Harvest with minor changes. This is a hearty one-pot dish that is quick and easy. Ingredients

    4 Tbsp bacon grease or margarine
    2 lbs chicken breast, boneless, skinless cubed bite size
    1 med. onion, chopped
    4 tsp chicken base with 3 1/2 cups of water or (2 cans of chicken broth)
    2 pkg - 10oz each mixed vegetables, frozen
    1 pkg - 12 oz. egg noodles, whole grain
    2 cans condensed 98% fat free cream of mushroom soup
    1 1/2 cups of milk, fat free
    1 1/2 cups parmesan cheese
    2 jars - 4 oz. chopped pimiento, drained
    garlic salt to taste
    pepper to taste

Directions

In a large stock pot over medium heat, heat the bacon grease; add chicken and onions. Cook 10-15 minute or until chicken is done and no longer pink.

Season with garlic salt and pepper to taste.

Add chicken base and water; heat to boiling.

Stir in uncooked noodles and vegetables, stirring to coat evenly with liquid. Heat to boiling; reduce heat to medium. Cover and heat about 15 minutes, or until most liquid is absorbed, stirring occasionally.

Stir in soup, milk, cheese and pimiento until well combined and creamy. Simmer uncovered about 10 minutes or until heated through.

1 serving = 1 cup
