This is a great low calorie, low Glycemic Index dessert.Substitute Calorie Countdown low carb milk and lower carbs by 1.5 per serving. Fat will increase to 1 gram per serving. Same total calories as nonfat milk.

Ingredients

canned pumpkin, 1 15 oz. can
Egg Whites - 1/4 cup about 2 egg whites
Milk, nonfat, 1 cup
McCormic Ground Ginger, .5 tsp
Nutmeg, ground, .5 tsp
Cinnamon, ground, 1 tsp
Salt, 1 tsp
Splenda, Granulated (Cup Measurment), .66 cup
Directions
Combine ingredients in a bowl. Mix until even consistency. Do not over mix
Pour mixture into a greased (cooking spray) 8 or 9 inch glass pie pan.
Cook until done. 350 degrees for about 30-40 minutes.
No sticking of custard to a knife inserted into middle of pie.
