3 medium-sized garlic cloves peeled and finely chopped.
1 cup tahina paste (about 245g) Please note the brand you choose may have a different caloric value.
3/4 to 1 cup cold water
1/2 fresh lemon juice
3/4 tsp sea salt measure then grind fine or salt to taste
Beat in 1/2 cup cold water lemon juice and salt.
Slowly add remaining water* 1 tablespoon at a time. ( I just pour it in very slowly as the mixture spins till it looks right)
*You are looking for a thick consistency like thick mayonnaise, it should hold its shape solidly in a spoon. You may not need to add all of the remaining water.
Remember to scrape the sides down and mix thoroughly.
This usually yields 2 cups sauce. Serving size is 1 Tbsp.
I use this sauce to make Hummus but there is always about a 1 cup left over.
