Introduction

Number of Servings: 4

Ingredients

    4 tablespoons olive oil
    1/2 large yellow onion, chopped
    1 medium bell pepper, chopped
    3 cloves garlic, chopped
    1 pound russett potatoes, cooked, peeled, and diced
    6 ounces leftover grilled steak, cubed
    1 can Green Giant Niblet corn

Directions

Heat 2 tablespoons olive oil in large skillet over medium high heat. Add bell pepper. Cook and stir for 2 minutes. Add onion and garlic. Cook and stir for 2 minutes. Add diced potatoes, mix together, and cook for 5 minutes. Season to taste with salt and pepper or Morton's Montreal Steak Seasoning. Stir to turn potatoes over, then add steak and stir to heat for 2 minutes. Add corn and stir to heat for 2 minutes. Makes 4 servings, 3/4 cup each.
