Blueberry Quinoa Salad

Introduction

Light salad, delicious. Light salad, delicious.
Number of Servings: 6

Ingredients

    1 cup Whole Grain Quinoa
    1.5 cups Vegetable Broth
    1/2 cup Parsley
    2 Tbsp Fresh chopped mint leaves
    2 Tbsp Extra Light Olive Oil
    2-3 cloves Garlic
    1/4 cup Lemon juice
    1.5 tsp Sea Salt
    1.5 tsp pepper
    2 Tbsp toasted slivered Almonds
    1.5 cups Blueberries

Directions

Add quinoa to broth and bring to boil. Cover and reduce heat to low, cook for 20-25 minutes. Remove from heat and allow to cool.

In a small bowl, combine oil, lemon juice, garlic, salt and pepper.

After quinoa has cooled, mix all ingredients in a medium bowl. Serve at room temperature or chilled. The flavor improves as the ingredients marinate in the fridge for a day.

  • This was a great recipe for my family. I've tried to get my daughter and husband to eat more grains like quinoa, and adding the blueberries (on sale and plentiful in the Northeast right now) did the trick! Very easy, and delicious :) - 7/11/10
