1 cup Whole Grain Quinoa
1.5 cups Vegetable Broth
1/2 cup Parsley
2 Tbsp Fresh chopped mint leaves
2 Tbsp Extra Light Olive Oil
2-3 cloves Garlic
1/4 cup Lemon juice
1.5 tsp Sea Salt
1.5 tsp pepper
2 Tbsp toasted slivered Almonds
1.5 cups Blueberries
In a small bowl, combine oil, lemon juice, garlic, salt and pepper.
After quinoa has cooled, mix all ingredients in a medium bowl. Serve at room temperature or chilled. The flavor improves as the ingredients marinate in the fridge for a day.
