1 1lb. shrimp
2 C cooked brown rice
1 C peas and carrots, defrosted
4 tbsp soy sauce
1 tsp olive oil
Cook brown rice.
Cook shrimp in olive oil and cook until shrimp turned pink.
Add chopped scallions and peas and carrots. Cook about 5 mins., stirring occassionally.
Add cooked rice to pan.
Stir in 4 tbsp soy sauce.
Cook about 5 minutes until seasoning has mixed with rice.
