IntroductionGreat salad even for summer, I call this "Thanksgiving" salad because all of the ingredients remind me of elements of a Thanksgiving dinner. Great salad even for summer, I call this "Thanksgiving" salad because all of the ingredients remind me of elements of a Thanksgiving dinner.
3/4 C red quinoa (measured dry), cooked
1/2 lb turkey breast, roasted and diced
1/2 C dried cranberries
1 lb fresh green beans, rinsed, chopped in small pieces and lightly steamed
8 green onions, sliced
Sprinkle of chopped or sliced raw almonds (optional)
1/2 C fresh squeezed lemon juice
1/4 C olive oil
1/4 C balsalmic vinegar
4 T honey
Cook the quinoa, steam the beans and let both cool. Mix all the ingredients together (except dressing).
In a glass jar with a lid, mix dressing ingredients and shake well.
If you don't want to serve all at once, store salad and dressing separately and combine / toss as needed.
Serve over pieces of lettuce or spinach.
