Everyone asks me for this recipe because it is delish! My kids LOVE it too! Place it in the toaster oven to heat it up for a quick/healthy breakfast! Everyone asks me for this recipe because it is delish! My kids LOVE it too! Place it in the toaster oven to heat it up for a quick/healthy breakfast!
Number of Servings: 20

Ingredients

    2.5 c. Whole Wheat flour, 3-4 very ripe bananas; mashed, 1 1/4 c. packed brown sugar, 1 cup chopped walnuts (or raisins if you prefer), 2/3 plain greek yogurt, 2 eggs, 1/3 c. unsweetened applesauce, 1 tsp. baking soda, 1 tsp. salt, 1 tsp. vanilla

Directions

Combine all ingredients (after mashing bananas) and pour into 2 loaf pans. Bake at 350 for an hour to an hour and 15 minutes. Be sure to cut each loaf into 10 slices for the nutritional information to be correct per slice. 8 or 9 inch loaf pans are fine, but I have also used muffin cups to make banana bread muffins instead...the kids love them this way!
