Greek Salad (Sandy Style)

Introduction

Number of Servings: 6

Ingredients

    1 - 1 1/2 English Cucumbers (limited due to the size of bowl I have, no other reason)
    1 Bell Pepper, your colour preference
    2 whole Tomatoes cut up (or more or a cup or so of halved grape tomatoes)
    1/3 Red or Sweet Spanish Onion
    6 - 8 Sun-dried Black Olives, sliced up to remove pits
    3/4 cup Feta Cheese or to taste
    5 tbsp Renee's gourmet Greek Feta Mediterranean Dressing


Directions

Use fork to score peel of cucumbers, slice into bite sized pieces, add to glass bowl (I use a Corningware bowl with lid). Cut up tomato, bell pepper, onion into bite sized pieces, add to bowl. Slice olives into small pieces to remove pits, add to other veggies. I don't use whole olives because I don't like to get too much olive taste at a time. Cut up or crumble feta cheese on top. Top-dress with Renee's Dressing. Refrigerate until ready to eat. Makes 5-6 very generous portions.
