IntroductionLike regular lasagna, with eggplant in place of noodles Like regular lasagna, with eggplant in place of noodles
1 large can of tomato puree
1 can tomato paste
.5 lb 93% ground beef
1 cup cottage cheese
2 T freshly grated parmesian cheese
I eggplant, peeled
1 cup Mozzerella cheese
While it is simmering mix the cottage cheese, parmesian cheese and 1T of parsley flakes
Cut eggplant into long strips (about 1/4 inch thick)
When sauce it finished, line the bottom of a pan with eggplant strips, top with 1/2 of the sauce then 1/2 of the cottage cheese mixture and top with 1/2 of the cheese (two layers).
Bake at 350 for 30 minutes
