Stuffed Zucchini

Introduction

I make this as part of my low-carb diet. I have frozen them when I had an over abundance of zucchini & summer squash from my garden I make this as part of my low-carb diet. I have frozen them when I had an over abundance of zucchini & summer squash from my garden
Number of Servings: 2

Ingredients

    2 baby zucchini
    8 oz lean ground beef, chicken, turkey or pork
    1/2 cup finely chopped red pepper
    1/2 cup finely chopped sweet onion
    Fresh garlic to taste
    Fresh Parsley
    1/2 cup of shredded cheese

    Other vegetable can be added or substituted for a variation, I've used; mushrooms, broccoli, cauliflower, celery

Directions

1 whole zucchini is a serving. I have also served this a 4 servings and added a salad.

Slice Zucchini in half length wise. Remove all but 1/4 inch of pulp, finely chop. Add red pepper, onion, garlic, parsley and 1/4 cup of cheese. Stuff Zucchini. Sprinkle with remaining cheese. Cooking time will vary depending on size of zucchini & amount of stuffing.

To Grill: drizzle a small amount of olive oil on aluminum foil, so zucchini doesn't stick. wrap each zucchini half in aluminum foil, for about 10-15 minutes. Fold back the foil and finish cooking until browned.

To Bake in Oven: drizzle a small amount of olive oil in bottom of a baking dish. Place the zucchini in the baking dish. Cover and bake at 350 for about 10-15 minutes. Uncover and finish cooking until browned.
