Salmon salad

Number of Servings: 8

Ingredients

    1 lb salmon filets
    .5 cup Kraft light mayo
    2 celery stalks chopped
    3 -4 scallions chopped
    3 oz lemon juice (about 1 lemon)

Directions

season salmon with salt & pepper
spray fry pan with cooking spray, or 1 tsp of olive oil, cook skin side up for 3 -4 minutes, turn over cook until done

mix mayo, lemon juice, chopped celery and scallion, combine with cooked salmon; break salmon up into bite sized chunks.

Serve salad on a healthy roll (light wheat hot dog bun, etc.), or serve on a bed of lettuce.

Delicious served warm or cold.
