Tamale Pie

Introduction

Number of Servings: 6

Ingredients

    1 - pound lean ground beef
    1 - can (10-ounce) diced tomatoes and green chiles, drained, Ro-Tel
    1 - cup chunky salsa verde
    1 - package (8.5-ounce) corn muffin mix, Jiffy
    1 - cup cream-style corn
    1 - can (2.25-ounce) sliced black olives, drained
    1 - cup shredded Mexican cheese blend.

Directions

1. Preheat oven to 350 degrees F.

2. In a medium saucepan, over medium heat, cook and stir ground beef until browned, breaking up clumps. Drain off fat; stir in tomatoes and salsa until thoroughly combined. Transfer to a 1 1/2 quart casserole dish.

3. In a small bowl, stir together muffin mix and corn just until combined. Spread over mixture in casserole. Sprinkle with olives.

4. Bake in preheated oven for 45 to 50 minutes or until bubbly. (If edges start to brown cover with aluminum foil.) Top with cheese. Bake for 5 minutes or until cheese is melted.

You can top with sour cream when serving but not included in calories. You could also put sliced jalapenos in the corn bread topping instead of olives to make it spicier.
