Holli's Pork Paprikash (Low Carb)

Ingredients

4 (1/4 lb) boneless pork loin chops
1/2 tsp Salt
Black Pepper
3/4 C Chicken Broth
1/2 tsp Onion powder
1/2 tsp Garlic powder
2 C Spinach, fresh
2 Tbs Paprika
2 Tbs Yogurt, Plain, NonFat
Directions
1. Pound the chops to 1/4 inch thickness and season with salt and pepper.
2. Spray a nonstick skillet with nonstick spray and set over medium-high heat. Add chops and cook until browned and cooked through, about 2 minutes on each side. Transfer to a plate and cover with foil to keep warm.
3. Stir broth into skillet, scraping up any browned bits. Stir in onion and garlic powder, then add the spinach. Reduce heat, cover, and simmer about 5 mins.
4. Stir in paprika, cook uncovered 20 seconds. Stir in yogurt and heat 10 seconds. DO NOT ALLOW TO BOIL. Slip in pork and any accumulated juices. Cover and set aside off the heat for 5 mins before serving.
