Fluffy Tapioca Cream -Light Version

Introduction

Just the good old fashion tapioca made by my mom and her's. I just used splenda and nonfat milk still that great taste. I used Kraft Minute Tapioca and followed the directions. There is also the pudding recipe were you dont have to beat the egg whites. This is an old fashioned comfort food slimmed down Just the good old fashion tapioca made by my mom and her's. Number of Servings: 6

Ingredients

    3 TBLSP Krate minute Tapioca
    4 TBLSP Splenda
    1 egg white
    2 cups non fat milk
    1 egg yolk
    1 tsp vanilla extract

Directions

Mix tapioca, 2 TBLSP Splenda, Milk and egg yolk in med saucepan and let stand 5 minutes.
Beat egg white in medium bowl with electric mixed on high speed until foamy. Gradually add 2 TBLSP Splenda, beating until soft peaks
Cook on medium heat, stirring constantly wuntil mixture comes to a full boil (a boil that doesnt stop bubbling when stirred).
Remove from heat and quickly with electirc mixer on med pour hot mixture of egg whites until mixed. Add vanilla.
Cool 20 minutes stir. Serve warm or cold
Makes 6 1/2 c servings

I like to add sliced strawberries on top, this was a real treat my mom fixed when we were kids.

For traditional pudding you add whole egg in before 5 min resting and then cook as directed above. Vanilla is still added at end of process.
