Introduction

This is just a soup made from left over veggies in the fridg that I didn't want to go bad. This way i can get all my veggies in for the day with the soup. This also comes out a little like a veggie stew.

I tryed this at lunch today cold and it is very good This can be eaten Hot or Cold.

This time it will make 8 1cup servings.

Number of Servings: 8

Ingredients

    *Bok Choy, raw-shreaded, 5 cup
    *Baby carrots (3 oz ~ 17 carrots), 3 serving
    Scallions, raw, 0.5 cup, chopped
    Garlic, 3 cloves
    Western Family Lentils, 2 serving
    Western Family Instant Mashed Potatoes, 0.33 cup
    Western Family Black Beans Reduced Sodium, 2 cup
    2.5 servings bottle water (20 oz.), 4 serving

Directions

Cut all veggies up. Put in large soup pan. Rinse black beans and . Add water 4 - 16.9 or 4 - 20 oz . Cook till done. I used the instant potatoes to thicken the soup.

Makes 8 1 cup servings.
