Introduction

I saw a new dish featured on a commercial for Olive Garden, and by just looking at the two fried chicken breasts on the plate, I knew it was definitely unhealthy. So, I put my hand at rewriting a healthier version. So, I put my hand at rewriting a healthier version.
Number of Servings: 4

Ingredients

    5 sprays of I can't believe its not butter
    2 chicken breasts, no bone, no skin ( aobut 6 oz.)
    2 garlic cloves chopped
    1/2 bag of cheese tortellini (8 oz)
    1 c fresh mushrooms
    1/2 c white wine
    1 tbsp unsalted butter
    1 tbsp fat free cream
    1/4 c grated parmesan
    2 roma tomatoes, seeded and diced
    2 c fresh spinach

Directions


Cook tortellini and set aside.

In a pan, spray the butter, and add chicken. Cook through. Let rest for a few minutes, then slice. Return to pan, tossing with garlic and mushrooms.

Deglaze the pan with wine. Add the butter and cream, and stir until incorporated. Stir in parmesan and blend well. Add pasta, tomatoes and spinach. Heat through.

Makes 4 servings.
