This is a basic spinach recipe that can be modified with some chilis and paneer to make sag paneer. But it is yummy as a side dish as well...Number of Servings: 6
Ingredients

1 T Butter or Ghee
1 T Soybean oil (or other neutral oil)
1 medium onion chopped
2 cloves garlic minced
1 pepper seeded and chopped (or 1 t chili pepper flakes)
1/2" piece of ginger root minced or grated
1 T mild, medium or hot curry powder
1 t ground cumin
10 oz package of frozen spinach thawed and squeezed dry
1/2 to 1 cup plain nonfat yogurt (calories are set for 1/2 c)
Directions
Melt oil and ghee in a pan on medium heat and cook onions, ginger, pepper and garlic until onions are soft but not browned.
Add curry and cumin, stirring until fragrant (about 1 min).
Add spinach, reserving 1/3 for later. Stir together until mixed well. Transfer entire mixture to a blender add yogurt and process until smooth. Transfer entire mixture back to the pan and add the reserved spinach.
Cook until warmed through.
Serve on warmed bread, as a side dish or add farmers cheese or paneer.
