Introductiona great way to get your bran in the morning! AND this recipe's batter can be kept for 6 weeks in the refrigerator! a great way to get your bran in the morning! AND this recipe's batter can be kept for 6 weeks in the refrigerator!
2.5 c flour
1 tsp salt
2.5 tsp baking soda
1 tsp cinnamon
3-3.5 cups of bran flakes or raisin bran
1.3 c sugar
16 oz plain yogurt
2 eggs, beaten
1/2 c vegetable oil
grated rind of 3 oranges
(add walnuts or raisins or ginger to your liking)
add bran flakes, sugar & yogurt.
add beaten eggs & vegetable oil.
add grated orange. mix together well. store in airtight contained to keep in fridge.
to bake: DO NOT STIR BATTER. nearly fill desired number of muffin cups. sprinkle tops with sugar. bake at 375 for 20 minutes or until a toothpick comes out clean.
