Ingredients

    1 cup bulgar wheat
    1.5 cups of boiling water
    1 cup halved cherry tomatoes
    1 cup chopped mint
    1 cup chopped flat leaf parsley
    1 hothouse cucumber halved and seeded and sliced
    1/4 cup Olive oil
    juice of one lemon
    salt and pepper to taste

Directions

add boiling water to bulgar wheat and stir. Add oil, lemon juice and salt and pepper. Stir and let sit for one hour.
after an hour the rest of veggies toss and adjust seasoning.
service warm or cold.
