10 oz fresh asparagus
1 tsp extra virgin olive oil
1 lb beef stir-fry strips (top sirloin)
Salt and pepper
3/4 cup shredded carrot
1 tsp herbes de provence, crushed
1/2 cup dry sherry or dry marsala
1/8 tsp lemon extract (or 1/4 tsp grated lemon peel)
In a large nonstick frypan, heat oil over med-high heat. Add beef. Sprinkle with salt and pepper. Stir-fry for about 3 minutes.
Add asparagus, carrots and herbes de provence; cook and stir for about 2 minutes more. Add sherry and lemon; reduce heat. Cook for 3-5 minutes more or until beef is desired doneness and asparagus is tender-crisp.
May serve with rice.
