Chicken Cacciatore Crockpot Dish

Number of Servings: 4

Ingredients

    2 tsp Olive Oil
    6 chicken thighs (skinless)
    1 onion, chopped
    3 garlic cloves, minced
    1 can mushrooms, rinsed
    1 cup fresh mushrooms
    1 can diced tomatoes (no salt added)
    2 cups bell peppers
    1/4 cup tomato paste
    1 tsp dried oregano

    In a large skillet, heat the oil and cook the onion and garlic, stirring till softened about 5 minutes.

    Transfer the mushrooms, tomatoes, peppers, tomato paste and oregano and let simmer for 5 minutes or till flavors blended.

    Lay chicken thighs on the bottom of crock pot and pour sauce on top of chicken. Cook on high for 4-6 hours.

    Serve over noodles, pasta, or rice. Calories in pasta are not included in calorie count.
