Warm Mediterranean Tuna Pasta Salad

Good served cold too!

It seems like a lot of ingredients but most things you will probably have in your cupboards.

Perfect served for lunch with crusty bread and herbed dipping oil.

Number of Servings: 4

Ingredients

    1 cup whole wheat penne
    1 5oz can solid white albacore tuna (packed in water) drained
    1 tbsp capers rinsed and roughly chopped
    1 clove garlic minced
    1 shallot minced
    1 cup artichoke hearts
    5 leaves of basil minced
    2 tbsp chopped chives
    2 tbsp white wine vinegar
    2 tbsp oil
    1 tbsp fresh oregano (or 1 tsp dried)
    1 tbsp fresh parsley
    5 large cherry tomatoes chopped
    Juice of one lemon
    salt and pepper to taste

Directions

Cook pasta according to package directions omitting salt and fat.

Meanwhile chop and mince all your vegetables and herbs and put in a medium bowl, add the remaining ingredients.

At this point your pasta should be done cooking, drain and let cool for a couple of minutes. Toss pasta into the bowl with the rest of the ingredients and stir until well mixed.

Serve!

Makes 4 1 cup side servings (or lunch servings) or 2 2 cup entree portions.
