2C cantelope (I used Hermiston) 1 jajapeno (hot) 2C Roma tomatoes 2C Walla Walla Sweet onion 1C apple (I used Pink Lady) 1 lime 1C mango 1C Cilantro
chop all ingredients into small pieces and toss together. Squeeze the lime over the salsa and toss together. I covered mine and let it sit in the frig for 4 hours before serving. We like things hot so if you don't you might only use 1/2 of the jalapeno. We also use a lot of cilantro and 1C might be too much for some people. I am going to serve this with Pork Loin tonight and will probably use it with fish tomorrow.
