Chicken Enchiladas

Introduction

Creamy chicken filling spiced up with jalapenos and smoky chipotle cheddar cheese. Adapted from a family friend, this is a winner in our house! Ingredients

    10 oz chicken breast
    2 cups mushrooms, sliced
    1 bell pepper, sliced
    1/2 cup dry bulgur wheat
    4 oz chipotle cheddar cheese, shredded
    1 cup enchilada sauce
    4 T diced jalapenos (fresh or canned)
    1 can Campbell's Healthy Request cream of mushroom soup
    1 can Campbell's Healthy Request cream of chicken soup
    5 flour tortillas
    1 serving of Chef Meg's Taco Seasoning (check SparkRecipes for recipe details)

Directions

1. Preheat oven to 350. Coat large pyrex baking dish with non-stick cooking spray. Bring small saucepan of water to boil, add bulgur, turn off, cover and let sit until water is absorbed.
2. Coat large skillet with non-stick cooking spray. Cook chicken until browned and cooked through. Remove, dice and set aside.
3. Add olive oil to skillet and heat. Add mushrooms and peppers. Saute for 3-5 minutes or until vegetables are tender. Add soups, taco seasoning and jalapenos. Mix to combine, then add chicken back in. Sir to combine all ingredients.
4. Fill tortilla with 1/5th bulgur, 1/5th chicken filling. Roll to close and place into pyrex baking dish. Repeat with remaining four tortillas.
5. Pour enchilada sauce over top of tortillas and top with cheese.
6. Bake at 350degrees for 15 minutes or until heated through and cheese is bubbly and brown.

Serve with greens and top with plain yogurt, sour cream or salsa as desired (note that these toppings are NOT included in calorie calculation.)
