Easy Chicken and Dumplings

Submitted by: ITALIANICE57

Introduction

I just whipped this recipe up to use a little leftover chicken I had and to feed my "hungry as a bear" husband some lunch and it was a hit. You may wish to season a little different according to taste. Directions

Shred leftover chicken breast and add to pot with chicken broth. Cook on High while you chop garlic and onion. Add them to pot along with carrots and seasonings. Let cook approx. 20 minutes (carrots should be quite firm). Add biscuits to liquid, just placing them in pot. You do not have to drown them. Cover pot and cook for 5-8 minutes. Check for doneness by scraping top of one biscuit with a fork. It should be bready. Hmmmmm!

OMG! This is soooo tasty! I looked at each package biscuit to find the lowest calorie one and I also tore up the biscuits so you got to enjoy more dumplings with each bite. I used low sodium and low fat chicken broth to cut calories as well. This was delicious! - 8/11/10

  • I've always made this in the crock pot, adding the biscuits (I also tear them up) and turning it on high for the last 30 minutes. I also add a can of cream of chicken or cream of onion soup. Delicious! - 12/22/10

  • I added some cream of chicken soup & half can of milk to this recipe, I also added some sage to give it more of a "chickeny" flavor. I boiled my chicken breasts in the broth before shredding it. A great starter recipe! - 11/4/10
