Lower Sodium Slow Cooker Salsa Chicken

Introduction

With apologies to the other recipes, this one adds all the ingredients, including brown rice and low fat sour cream. It uses a lower sodium salsa, and substitutes seasonings for taco seasoning. While the amounts called for are approximate for the seasonings--they are included in the calculations as 1 tbsp., however they should be adapted as "to taste." The salsa is from Amigo's salsa, Edmond, Ok and is marketed in Walmart as various collegiate brands (Arkansas, OU etc.) With apologies to the other recipes, this one adds all the ingredients, including brown rice and low fat sour cream. Ingredients

    *Chicken Breast, Schwan Boneless and Skinless, 8 oz
    Razorbacks Hog Salsa (Amigo's Salsa), 1 cup
    *Campbell's Cream of Mushroom Soup Healthy Request, 1.5 cup
    Chili powder, 1 tbsp
    Garlic powder, 1 tbsp
    Pepper, black, 1 tbsp
    Sour Cream, reduced fat, 4 tbsp
    *Rice, Kraft Minute Whole Grain Brown Rice, 2 cups

Directions

Otherwise--place skinless boneless chicken breasts in slow cooker, add the other ingredients except sour cream and rice, and cook until chicken is tender--about 2 hours on high, or 6 hours on low. Divide into 4 parts, and serve over 1/2 cup minute brown rice with 1 tbsp of low fat sour cream. Makes 4 servings.
