Ground Turkey Hot-Cha-Cha

Introduction

Not for those who don't like heat! Not for those who don't like heat!
Number of Servings: 6

Ingredients

    16 oz Jennie-O grnd turkey 93/7
    1 T olive oil
    .4 oz/12g chopped ginger root
    4g/1 minced clove garlic
    178g/6.2 oz chopped onion
    1.4 oz/115 g chopped red bell pepper
    1/2 cup Quinoa (dry)
    264 g/9.3 oz/ 1 can rinsed black beans S&W 50% less sodium
    1 can Rotel Hot
    13 g/.5 oz chopped jalapeno pepper
    1 cup chopped tomatoes
    1.5 cup water

Directions

Brown turkey with onion, garlic, jalapeno in olive oil. Add remaining ingredients. Simmer 20 mins, stirring once during cooking. Makes 6 servings. I haven't measured it yet, but about 1+ cups each serving.
