Spicy shrimp salad

Introduction

A wonderful summer salad full of protein. I make my own light ranch dressing (also included in my recipes) for a full on, homemade meal. A wonderful summer salad full of protein. I make my own light ranch dressing (also included in my recipes) for a full on, homemade meal.
Number of Servings: 4

Ingredients

    2 ears fresh corn
    1 pound shrimp, thawed
    1 to 2 heads boston lettuce
    2 tbsp olive oil
    1 tsp red pepper/cayenne

Directions

Toss shrimp with oil and pepper and grill or sautee for 3 to 5 minutes, until opaque. Let them sit another five minute off heat.

Grill corn 10 minutes and allow to cool. Cut kernels off into a large bowl.

Toss kernals with lettuce (I also add sliced yellow pepper and green onions!). Add shrimp and 1/2 cup preferred dressing (I use my homemade Light Ranch dressing).
