Slow Cooker Chicken Dinner with Cabbage

Introduction

From Fix-It and Forget-It Lightly cookbook. Veggies and tender and delicious! Don't skip the cabbage. It is sooo good.

This is a complete meal. No need to add anything!

This works best in a 5-6 quart slow cooker, but I use a 4-quart. Tight fit, but it is ok.

Number of Servings: 4

Ingredients

    4 medium-sized potatoes, cut into chunks
    4 Carrots, sliced
    1 large Onion, chopped
    Cream of Mushroom Soup, 98% fat-free, 1 can
    Water, tap, 1/2 cup
    Cabbage, fresh, 4 wedges (approx. 1/2 medium head)
    Chicken Breast, boneless, skinless, 4 breasts
    1 tsp salt
    1/2 tsp black pepper

Directions

1. Layer vegetables in bottom of slow cooker.
2. In small bowl, mix together soup, water, salt and pepper. Spoon half of mixture over vegetables.
3. Place chicken over soup and vegetables.
4. Add remaining diluted soup.
5. Cook on high for 4 hours or on low 7 hours, or until vegetables are done.

Make sure not to cook it too long or the chicken might dry out.
