Tropical Rhubarb Crunch

Introduction

Who would have thought to combine rhubarb with pineapple and berries Who would have thought to combine rhubarb with pineapple and berries
Number of Servings: 8

Ingredients

    3 cups chopped fresh rhubarb
    1 cup chopped fresh pineapple
    1 cup fresh strawberries
    1 cup fresh blueberries

    Topping:
    1 1/4 cups rolled oats, not instant
    1/2 tsp ground ginger
    1/8 cup each honey and packed brown sugar
    1/4 cup flax meal
    1/4 cup margarine

Directions

Combine the filling ingredients in a large microwavable bowl. Set aside.

Combine the topping ingredients. Sprinkle over top of the filling mixture. Place bowl in microwave and cook on High for 8 minutes. Rotate dish and cook for another 6 to 8 minutes, until fruit is tender.

Makes 8 (1/2 cup each) servings
