Basic Veggie Soup

Introduction

An easy, non-thinking vegetable soup made from things you probably have in the kitchen already An easy, non-thinking vegetable soup made from things you probably have in the kitchen already
Number of Servings: 8

Ingredients

    3 medium potatos
    1.5 cups chopped carrot
    1.5 cups chopped celery
    1/2 large onion (I like onion, you can use less if you'd like)
    4 McCormic's all vegetable beef boullion cubes, dissolved in
    8 cups of water

Directions

Put the water in a big pot,
add boullion cubes (you may want to use less boullion and add more flavour with a bay leave or some spices)
add chopped veggies (optional:Sautee onions before adding to pot)

simmer, mostly covered for 45-60 min, add salt and pepper to taste

makes 8(ish) 1 cup servings.

You can use this recipe as a starter for more exotic things, like adding beef cubes, or subbing in a chicken broth, and adding chicken.
