Tzatziki Light

Introduction

light and tasty! Great on pasta salad or as a dip. light and tasty! Great on pasta salad or as a dip.
Number of Servings: 16

Ingredients

    3/4 tsp salt
    6 cloves garlic
    1 cup light sour cream
    2 medium cucumbers, peeled and seeded(I counted them as one large because seeding takes out a lot)
    pepper to taste
    dash of lemon juice(optional)

Directions

1) Peel and coarsely chop garlic and place in a mortar with pestle. Add salt a little at a time and crush garlic until it resemble a paste.
2) Peel and seed 2 medium cucumbers-puree in food processor until it turns to a liquid(there will still be some texture, but no chunks)
3) Add garlic/salt paste and cucumber to sour cream.
4) Add pepper and lemon juice to taste.

If you like it thicker use only one cucumber or more sour cream

makes 16 2-tbsp servings
