Chicken Rortini-Eat Clean

Ingredients

3 chicken Breasts
1 Tb olive oil
1/2 large onion
1 med. carrot
1 celery stalk
1/4 C basil
1 tsp oregona
2 tsp garlic
2 large tomatoes
1 med yam or sweet potato
1/4 C low sodium chicken broth
2 C Brown Rice Rotini
Directions
In skillet cook onion, carrots, and celery in olive oil until tender. Add herbs and garlic cook 2 to 3 minutes. Add chopped tomatoes, sweet potatoes, along with broth. Add chicken strips. Bring to a boil and then simmer for 20 minutes. Mealwhile in sauce pan boil rotini until done then add to pot. Simmer for 10 minutes.
