1 lb shrimp peeled 1/2 c chopped onion 1 red bell pepper chopped 1 can diced tomatoes 1 1lb box barilla linguine 2 tsp cajun seasoning 4 tbsp brummel and brown butter made with yogurt 1/2 c half and half
Prepare linguine according to package directions. Melt butter in saucepan. Sautee onion and bell pepper until translucent. Sprinkle shrimp with seasoning and sautee until almost opaque. Add canned tomatoes, juice and all. Simmer for a few minutes, reducing slightly. Add cream and return to simmer. Add cooked pasta and remove from heat. Toss then serve. Serves 8.
