Extra Cheesy Pita Burritos

Introduction

Whole wheat pita pockets stuffed with Velveeta cheese, and meat mixture (mozzarella, lean ground beef and salsa).

Originally made for filling for flour tortillas, this recipe was derived from the leftovers.

This would also make a great dip. Just exchange the calorie amounts for the pita or tortilla with the calorie value of the chips.

Ingredients

    1 pound of Lean Ground Beef (93% Lean)
    ľ cup of Tostitos All natural Medium Chunky Salsa
    Ĺ cup of La Preferida Authentic Refried Beans (non chunky version)
    1/4 cup Kraft Low Moisture Part Skim Shredded Mozzarella Cheese
    10 whole wheat pita pockets (80 calories per serving)
    10 oz of (2% Milk) Velveeta cheese *(16 oz block cut into 16 equal slices)

Directions

Brown ground beef in a skillet over medium heat. (I donít bother draining the meat since itís so lean to begin with but you can if you want).
Stir in beans, salsa and mozzarella cheese. Heat until cheese is melted.
Put ľ cup of meat mixture and a 1 oz slice of velveeta cheese into a pita pocket.

Fill desired number of Pita Pockets with beef mixture and refrigerate remaining in a covered container for up to 3 days.
(For heating up leftovers fill pita with meat mixture and microwave for 1 minute 30 seconds remove from microwave and add velveeta.

Serving Size:
1 Burrito

TIPS:
For Burritos using tortillas: Put Ĺ cup of the filling in a large fajita size flour tortilla (minus the velveeta)-(282 calories) or split the filling (1/4 cup each) between 2 smaller corn tortillas (312 Calories) Makes 5 burritos with Flour tortillas or 10 with corn tortillas. Try adding extra mozzarella on top (just be sure to count the extra calories).
