Clean Eating's Sweet Potato Salad

Introduction

Ingredients

    4 sweet potatoes, peeled and cut into chunks
    3 Tbsp EVOO
    1 large purple onion
    2 leeks, white and light green only
    1/2 C light beer
    1 Tbsp unsulfured molasses
    2 tsp Exotic spice***
    1/2 C raisins, soaked in hot water
    1/3 C sunflower seeds, unsalted

    Exotic Spice
    1 tsp cumin
    1 tsp black pepper
    2 tsp paprika
    1 tsp cayenned pepper
    1 tsp cinnamon
    1 tsp sea salt
    1/2 tsp anise seeds
    1/2 tsp nutmeg

    Nux together and store in a closed container.

Directions

Place sweet potatoes in a sauce pan and cover with water. Bring to a full boil and reduce heat. Cook just until tender but not soft or mushy. Remove from heat and drain.

In a large frying pan, heat olive oil. Add onion and leeks and saute until soft. Add beer or stock and molasses. Bring to a boil stirring frequently. Reduce heat and simmer until the liquid on the bottom becomes thickened about 10 minutes. Remove from heat.

Combine potatoes and onnion. Add spice mix, sunflower seeds and raisins. Serve immediately.
