A high-protein breakfast that can be prepared in advance and eaten hot or cold.
4 cups eggbeaters eggwhites
1/2 cup onion
1/2 cup red bell pepper
10 oz. pkg frozen spinach
hot sauce to taste
Stir mixture well and pour into sprayed 8x11 pan.
Bake at 350 degrees for 45 minutes, or until solid.
Cut into 4 squares, add hot sauce as desired and eat hot or cold.
