Chicken Alfredo Bake

Introduction

A recipe I adapted from a few others here on Spark. I didn't want to use alfredo sauce in a jar, and I needed to cut salt, so here it is. Number of Servings: 8

Ingredients

    Boneless Skinless Chicken Breast (Harvestland), 23 oz (remove)
    Summer squash, 1 cup, chopped (remove)
    Onions, raw, 1 small (remove)
    Cauliflower, raw, 454 grams (remove)
    Broccoli, fresh, 255 grams (remove)
    Mrs. Dash extra spicy, 3 tsp (remove)
    Grill Time seasonings, Steak (Kroger), 0.5 tbsp (remove)
    Garlic, 1 clove (remove)
    Private Selection 1% organic milk, 2 cup (remove)
    Kroger Chicken Broth, less sodium, 1.75 cup (remove)
    Cornstarch, 0.25 cup (remove)
    Kroger Parmesan Cheese, 1.5 cup (remove)

Directions

Dice chicken into bite size pieces. Set aside.
Chop onions and garlic.
Cut broccoli and cauliflower into pieces.
Heat skillet over med-high heat and spray with cooking spray. Add chicken and season with Mrs. Dash and grilling spice. Cook, stirring occasionally until cooked through. Pour into baking dish.
Meanwhile, put broccoli and cauliflower into bowl and cover with pastic wrap. Microwave 7 minutes, stirring once. Pour over chicken.
Place half the onions in the chicken skillet and cook until clear and soft. Add squash and cook, stirring occasionally, 3-5 minutes. Pour over chicken.
Heat a medium saucepan over med. heat. Spray with cooking spray. Add other half of onions and the garlic. Saute until soft and browned a bit. Pour over chicken misture, then return pan to heat. Add chicken broth. Dissolve corn starch in milk and pour into pan. Cook and stir until smooth and thick. Add cheese and stir until thick and cheese is melted. Pour Sauce over chicken and veggies.
Bake at 350 for 20 minutes, until bubbly.
