Creamed chicken

Introduction

This is a favorite of my hubby and kids, got it from my mom. You can also saute some chopped green pepper in with the melted butter too. I made it bit healthier with the low fat milk and the smart balance butter. Great to use leftover cooked chicken or turkey. Serve it over white or brown rice. Number of Servings: 6

Ingredients

    1 lb of boneless, skinless chicken breast, cooked and cut up into bite size pieces
    4 Tbsp of Smart Balance 50/50 butter blend.
    1/3 c all-purpose white flour
    1 1/4 c of chicken broth
    1 1/4 c 1% milk
    salt
    pepper

Directions

1. In a skillet, melt the butter over med. high heat. Add in the flour and make a rue.

2. Add in the milk and chicken broth, and mix well. When the sauce begins to thicken add in the chicken breast. Salt and pepper to taste.

3. Serve over rice. Enjoy!
