Introduction

Your basic clean-out-the-fridge combo. Your basic clean-out-the-fridge combo.
Number of Servings: 6

Ingredients

    2 T. olive oil
    1 yellow onion, finely chopped
    1 large carrot, diced
    3 cloves garlic, smashed
    4 oz. polish sausage, diced
    6 c. water
    2 tomatoes, diced
    1 head broccoli, chopped
    4 c. loosely packed torn kale
    1 can great northern beans, undrained

Directions

Heat oil in soup pot; add onions and carrots and cook til beginning to soften. Add sausage and cook til carrots are soft and golden and sausage is beginning to brown.

Add water and tomatoes and simmer 10 minutes. Add broccoli, kale, & beans; stir to combine well, simmer a few more minutes.

Serve with crusty bread.
