Cool & Fresh Mediterranean Rice Salad

Introduction

This fresh made up of raw Mediterranean vegetables is especially good in the summer! Best served cold. This fresh made up of raw Mediterranean vegetables is especially good in the summer! Best served cold.
Number of Servings: 4

Ingredients

    4 medium tomatoes, wedged
    100g green olives, sliced (or black)
    1/2 cucumber, peeled and sliced (or with peel)
    1 cup green peppers, chopped
    1/4 raw onion, chopped
    6 slices turkey ham, strips
    3/4 cup fresh peas
    3/4 cup feta cheese (or goat's cheese)
    ground pepper to taste
    2 cups of uncooked rice

Directions

Chop or slice all the vegetables as indicated in the ingredient's list.

Cook the rice.

When rice is ready, mix together.

Put the mixed salad in the fridge to cool down for a few minutes (optional)

Best served cold.
