Italian Cannellini Bean Salad

Introduction

Nice summer salad and a year round favorite in our household. You may add additional vegggies if you like. Pepperoni, pepperoconi, and hard salami are nice too. Number of Servings: 4

Ingredients

    1 14 oz can Cannellini beans rinsed and drained ( May use great northerns)
    1/4 c. EVOO
    1/2 t. Basil
    1/8 t. Ground sage
    1/3 c. diced Red onions
    1/2 t. salt 1 t. Rice vinegar (Seasoned or regular or your preference)

Directions

Combine beans and onions in medium serving bowl. Add EVOO and vinegar and gently mix. Refrigerate for at least 2 hours. I like to make mine the evening ahead.

Makes 4 1/2 c. servings.

*Calorie calculations seem a bit off to me.
