Potato Salad with Green Beans Vinagrette

Introduction

This is a wonderful version of potato salad without mayonaise. It travels and keeps well. It is always a hit in our house. This is a wonderful version of potato salad without mayonaise. It travels and keeps well. It is always a hit in our house.
Number of Servings: 6

Ingredients

    1 1/2 lbs new baby potatoes with skins
    1 lb fresh green beans
    1 med red or sweet onion sliced very thin
    3 hard boiled eggs cut into wedges
    2 TBS balsamic vinegar
    2 TBS white wine vinegar
    1 TBS dijon mustard (or honey dijon)
    2 TBS olive oil
    salt and pepper

Directions

Scrub potatoes and boil whole until tender. Cut green beans into bite size pieces. Tinly slice the onion. Boil the eggs, and peel.
Mix vinegars, mustard, olive oil and salt and pepper while potatoes are cooking.
Cut hot potatoes into bite size chunks. Mix in onions, then add the dressing. Add the green beans and mix carefully. Garnish with egg quarters.
