Sauteed Summer Squash

Number of Servings: 6

Ingredients

    Extra Virgin Olive Oil, 1 Tbsp.
    Summer squash, 6 cup, chopped into 1" chunks
    Raw White Onion 1 medium Onion thinly sliced
    Yellow Bell Pepper 1 Tbsp. finely chopped
    Salt, 1/4 tsp.
    Nutmeg, ground 1/4 tsp. (fresh ground is best)

Directions

Makes 6 1 cup servings.

Saute onion & bell pepper in olive oil over medium heat until slightly browned. Add rest of ingredients & toss to coat squash. Add 1/4 - 1/4 cup purified water, cover, reduce heat to low & simmer 15 minutes or until squash is soft, stirring occasionally.
