Shepard's Pie (7/16/10)

Submitted by: SHINAKO

Introduction

I love making Shepard's Pie for large crowds. The turkey makes it healthy, and the bacon bits add flavor without the fat. Toppings are always variable, and you can just add whatever's in your fridge or freezer! I love making Shepard's Pie for large crowds. Ingredients

    - Ground Turkey, 3 pounds
    - Bacon Bits, Small Bag
    - Papriak, 3 tbsp
    - Frozen Vegetables, 2 bags
    - Shredded Cheddar Cheese, .5 cups
    - Mashed Potato Flakes, approx. enough for 10 servings
-- Ranch Dressing, 5tbsp (optional, replacement for butter)
-- Shredded Cheddar Cheese 1 cup (Optional)
    -- Milk, 2 cups

Directions

1. Preheat oven to 420 degrees.

2. Heat pan, place ground turkey into the pan.

3. As the ground turkey starts to cook, but before it's thoroughly cooked, add the bacon bits and paprika.

4. Drain the ground turkey, and place in the bottom of one large casserole dish, or split (as I did) between two dishes.

5. Heat frozen vegetables according to the directions on the bag. Place over ground meat in dish(es.)

7. Sprinkle .5 cup of cheese over the layers so far.

6. Make mashed potatoes according to instructions. For added flavor, I substituted ranch dressing for butter, and stirred in the rest of the cheddar cheese.

7. Smooth mashed potatoes over the tops of the layers, evenness is not key.

8. Place in oven for 20 minutes.

Makes ~14 servings.
