I just about died and went to heaven just now when I made this for my breakfast! The hotter you can take it the better as far as the sauce you use goes. Get those eye lids watering with this hot and healthy breakfast! I just about died and went to heaven just now when I made this for my breakfast! Ingredients

    2 eggs
    1 serving Trader Joes Soy Chorizo
    1/4 cup black beans
    3 Tbs. salsa
    1-2 Tbs. low fat cheddar cheese
    olive oil cooking spray

Directions

Glorious day this is good! Use two pans and spray both with a little olive oil spray. Fry up the chorizo and black beans in one pan. Add one tablespoon of the salsa to the beans and chorizo and gently mix it all together. At the same in the other pan fry up your two eggs. Leave them a little runny. Put the eggs on the plate and cover with the chorizo and beans. Sprinkle with cheese and set the jalapenos on the side. It's so easy, you really didn't need a recipe for this, did you?
