Russian cabbage soup paleo

Ingredients

    4 oz chicken thighs or breast
    4 oz lean pork
    egg
    cabbage
    olive oil
    lemon
    white onion
    powdered mustard
    salt pepper

Directions

makes 8 servings of 2 cabbage wraps

make mayonase using
2 egg yolks (whites set aside)
beat until sticky and thick
add 1/4 tsp dry mustard
1/2 tsp salt
2 tsp lemon juice
mix 30 sec
add 3/4 cup olive oil in small amounts tsp by tsp letting the yolks absorb the oil
mix until thick
add 1 tbs boiling water

put in fridge

Substitute store bought mayo if you don't want to make your own or prefer the light version.

use a mixture of ground pork and ground chicken, or finely mince the meat and in a bowl mix with
1/2 cup diced onions
2 egg whites
1 Tbs salt
1 tsp black pepper

peal 16 of the cabbage leaves off keeping them intact, cut the excess spine off.

bring a bot of water to boil and place 3-4 leaves at a time in the water to make them more pliable (save the cabbage water)

wrap 1oz meat mixture like a burrito style starting with the base of the leaf.

spray large skillet with cooking spray and place cabbage wraps in skillet using medium heat to cook. cook each side until nice golden brown color develops. After browned place wraps in cabbage water add 1 tbs salt let boil for 15 min.

Spoon 2 wraps for a serving with broth and add mayonase to individual serving to taste. Salt if needed
