Stuffed Bell Peppers

Introduction

I got this from someone else on Spark and changed it just a bit. I got this from someone else on Spark and changed it just a bit.
Number of Servings: 4

Ingredients

    1/2 lb lean ground beef
    1 c minute rice (white) cooked
    1/2 C chopped onion
    2 cloves garlic
    1 cup canned whole kernel corn
    1 small can mushrooms
    1 small can black olives
    1.5 C salsa
    1/2 C Kraft mexican style cheese

Directions

Cut tops off peppers, clean out insides. Place on a pan in the oven and broil until sides are soft. Saute veggies, except for corn. Add beef to brown. Drain and add rice, corn and salsa. Simmer 5 minutes. Put prepared peppers in glass casserole dish. Spoon rice mixture into prepared peppers. Put cheese on top. Bake 20 minutes at 350 degrees.
